3 days (2 days and an evening actually) away from everything and just focussing on reflection and our lives... It was truly enlightening. Truly. Never did I sit down for so long just to think about how my.life has been going. Never did I have the opportunity to just stop and breathe for a moment. I really wished it would never end. I felt so relaxed, so at peace throughout the camp. Yet some part in me yearned for the camp to quickly come to a close. I missed the people I left behind for that 3 days.
But then I also knew I had no regrets going there. I made new friends, and grew closer to some old friends. I learnt many lessons, some new, some forgotten and remembered. There was one quote that came to mind during the camp and I feel the need to share it with all of you today.
I understood. Before I understood what love was, before I had learnt to love and be loved, going to church was simply a weekly chore, a way to spoil my Sunday. But then I understood and suddenly church made sense. I cared for someone, I cared to be loved and I cared to love. The gospels made sense, and the hymns touched me.
This camp made me remember that and helped me reaffirm it.
Remember, no matter what you believe in...

Breakfasts for the week~
4th March 2013: Crockpot lentil stew
The perfect meal when you're really short of time, as I always am.
5th March 2013: Baked okinawan purple sweet potato
They were just so enticing I could help but buy them. How often do we get okinawan sweet potato anyway? The best way to enjoy these beauties is just plain baked.
6th March 2013: Yoghurt topped with chopped dates and dried mulberries
Yet another little something that's kind of exotic: mulberries. I have never seen them in the supermarkets before.
7th March 2013: Crockpot cinnamon apple oatmeal
Another perfect breakfast for when you're in a rush~
1 apple, chopped
1 cup oats
2 cups water
1 tsp cinnamon
Put all into a crockpot and DO NOT stir.
Cook overnight on low for 8 to 9 hours.

8th January 2013: 1 ingredient coconut mousse (recipe coming up soon)
Really healthy and so simple to make.
9th March 2013: Cinnamon quinoa bars
Yes, I was at camp, but I brought my own breakfast :D Perfect if you're on the go. Recipe coming up soon.
10th March 2013: Apple cake in a jar (recipe soon, maybe)
Yup, also in camp. I dare say this was a genius idea.

I can't wait to try so many of these! The cinnamon apple oatmeal is going in the Crock Pot tonight. And coconut mousse?! Yum! I'm so glad to have found your lovely blog!
